Every year my parents and I make up some tasty treats to give to neighbors and members of the choir at church. This year, I was inspired by my friend, HK. She made chocolate covered peanut butter cracker sandwiches to give away as party favors for a birthday party. It tastes great for a rather odd combination. Needless to say, I stole her recipe and made up a bunch of these to hand out. Want super easy instructions? Read on.

HK's chocolate covered peanut butter sandwiches |
What you need:
- 1 box Ritz crackers
- 1 jar peanut butter (I used Jiff)
- Wilton candy melts (I used 2 bags of milk chocolate and 2 bags of dark chocolate)
Start by spreading a layer of peanut butter on a cracker and covering it with another cracker to make a peanut butter cracker sandwich. When you have all of your little sandwiches ready to dip, cover a cookie sheet with wax paper to use as a surface to let the chocolate set. Melt your chocolate according to the instructions on the package. Drop each sandwich into the melted chocolate and use a spoon to swirl them around and cover them completely. Place each sandwich on the wax paper and let set. You could also decorate them with sprinkles or chocolate drizzles at this point.
For variation, try Trader Joe's speculoos in place of the peanut butter. Mom insisted we try it since there was a jar of speculoos on the kitchen table as we were making these. They turned out just as tasty as the ones with peanut butter.
